Apple Pie

Pastry for 2-crust pie (Frozen pie crusts are available in our Country Store)
3/4 to 1 cup sugar
6-8 apples; pared, cored and thinly sliced
2 tablespoons flour
Dash of nutmeg
1 teaspoon cinnamon
Dash of salt
2 tablespoons butter

Combine flour, sugar, spices and salt. Mix with apples. Line 9-inch pie plate with pastry. Fill with apples; dot with butter. Adjust top crust (slit for steam), seal. Bake in a 400 degree F oven for 50 minutes, or till done.

Slow Cooked Baked Apples

4 to 6 large baking apples
1/4 to 1/3 cup sugar
1 pat of butter for each apple
Cinnamon to taste
1/4 cup water
2 to 3 tablespoons raisins

Core apples. Fill each with sugar, cinnamon, raisin mixture, top with butter; add water. Set electric slow-cooker on low in the morning; they’ ll be ready for dinner. Serve with ice cream or other cool topping.

Microwaved Baked Apples

4 baking apples
3 tablespoons raisins
3 tablespoons butter
3 tablespoons walnuts
1/2 cup brown sugar
1/4 cup apple cider

Core apples. Combine butter, sugar, raisins and nuts. Stuff into apples. Place apples in a shallow baking dish. Pour cider over apples. Cover with wax paper and cook on medium for 8 minutes.

Apple Crisp

4 cups sliced, pared, tart apples
3/4 teaspoon cinnamon
2/3 cup packed brown sugar
3/4 teaspoon nutmeg
1/3 cup butter or margarine
1/2 cup flour
1/2 cup uncooked quick oats

Preheat oven to 375 degrees F. Grease 8-inch square pan. Place apple slices in 8″ pan. Mix remaining ingredients; sprinkle over apples. Bake 30 minutes or until apples are tender and topping is golden brown. Serve warm with ice cream or cool topping.

Apple Crumb Cake

Apple filling:

6 cups apples, diced
1/4 cup water
1/4 cup sugar
1/2 tsp cinnamon

Mix all ingredients in a saucepan and bring to a boil; simmer 10 minutes. Make a paste of a little cornstarch and a little water to thicken apples. Put aside to cool.

Crumb topping and bottom crust:

3 cups flour
3 teaspoon baking powder
1-1/2 cups sugar
3/4 teaspoon salt
2 sticks butter or margarine
2 eggs

Cut in all ingredients as you would for making a pie crust. Put 2/3 of mixture in greased 9 x 13 pan. Put apples on top and remaining 1/3 mixture on top of apples. Bake in a 350 degree F oven for 40 minutes.

Microwave Apple Sauce

6 apples, peeled and quartered
1/4 cup water
1/3 cup sugar
1/4 teaspoon cinnamon

Place apples and water in 2-quart baking dish. Cover and cook on HIGH for 6 to 8 minutes, or until tender. In a food processor, combine cooked apples, sugar and cinnamon. Process until smooth.

Old-Fashioned Apple Sauce

8 tart apples
1 teaspoon grated lemon peel
3/4 cup water
(about) 1/4 teaspoon nutmeg
1/2 cup sugar
1/4 teaspoon cinnamon

Pare, core and slice apples. Add just enough water to prevent scorching. Bring to boil; lower heat to simmer; cover. Cook until soft, about 20 minutes. Put through sieve or food mill; add sugar and spices to taste.

General Apple Information

Store apples in refrigerator. The best choice for many bakers is a mixture of apples to achieve a balance of sweet and tart, soft and crisp.

  • 1 pound, or 3 to 4 medium apples = 1-1/2 cups applesauce
  • 7 to 9 medium apples for 9-inch pie

Applesauce can be frozen; increase spice being used by about 1/4, as flavor decreases during frozen storage. Cool quickly, package, seal and freeze at once.
