Pumpkin Pie

2 cups cooked pumpkin*
3/4 cup sugar
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground clove
1/2 teaspoon salt
3 eggs, slightly beaten
1 cup light cream
Pastry for 1-crust pie (Frozen pie crusts are available in our Country Store)

*Cut a medium size pumpkin in half. Place in baking pan, meat side down. Add one inch of water (water level must be kept at one inch during baking). Bake in a 350 degree F oven for 40 to 50 minutes. Pumpkin will be soft and easily separated from skin. Mash pumpkin with fork or run through food processor.

Combine pumpkin, sugar, cinnamon, nutmeg, ground cloves and salt. Blend in the 3 eggs and 1 cup of light cream. Pour into pie shell and bake in a 400 degree F oven for 40 to 50 minutes.

Pumpkin Cookies

1-1/4 cups brown sugar
2-1/2 cups flour
1/2 cup butter
4 teaspoons baking powder
2 eggs, beaten
1 teaspoon lemon extract
1-1/2 cups cooked pumpkin
1-1/4 cups raisins
1/2 teaspoon salt
1 cup chopped nuts
1/4 teaspoon ginger
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

Cream together sugar and butter. Add eggs, salt, spices and pumpkin. Sift flour and baking powder. Stir into sugar/butter mixture. Add extract, raisins, and nuts. Mix well. Drop by spoonfuls into greased cookie sheet. Bake in a 400 degree F oven for 15 minutes. Makes 3 dozen.

Pumpkin Ice Cream

1 cup mashed cooked pumpkin
1/2 teaspoon ginger
1/2 cup brown sugar
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 quart vanilla ice cream, soft
1/2 teaspoon cinnamon
1-9 inch Graham-cracker crust

Combine pumpkin, brown sugar, salt and spices. Stir the ice cream to soften, than fold it into pumpkin mixture. Freeze firm.

Pumpkin Bread

2 cups flour
1/2 cup vegetable oil
1 teaspoon baking soda
1-1/2 cups sugar
1 teaspoon salt
2 eggs, beaten
1 teaspoon cinnamon
1 cup cooked pumpkin
1/2 teaspoon ginger
1/4 cup water
1/2 teaspoon cloves

Sift dry ingredients together. Blend sugar, oil, eggs, pumpkin, and add to the flour mixture. Beat well. Pour into greased, floured pan and bake in a 350 degree F oven for 1 hour and 10 minutes.

Roasted Pumpkin Seeds

Immediately after carving the pumpkin, rinse the seeds thoroughly and blot dry with a paper towel. Spread evenly on an ungreased (or lightly sprayed) cookie sheet and bake in a 375 degree F oven for approximately 12 minutes or until they are crisp and slightly browned. Salt to taste. Check often, as cooking time varies with the wetness of the seeds.
